How to Make Jollof Rice

Jollof rice is a popular Nigerian dish made with rice, tomatoes, peppers, onions, and spices. It is often served at parties and celebrations. This recipe will teach you how to make a delicious and flavorful Jollof rice.

Ingredients:

  • 2 cups of rice
  • 4 tomatoes, chopped
  • 2 onions, chopped
  • 2 bell peppers, chopped
  • 1 tablespoon of tomato paste
  • 1 teaspoon of curry powder
  • 1 teaspoon of thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 4 cups of water
  • Vegetable oil

Instructions:

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions and bell peppers and cook until softened.
  2. Add the tomatoes and tomato paste and cook until the tomatoes have broken down.
  3. Add the curry powder, thyme, salt, and black pepper and cook for 1 minute.
  4. Add the rice and stir to coat with the sauce.
  5. Add the water and bring to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the rice is cooked through.
  7. Fluff the rice with a fork and serve hot.
